|· 2 cups/475 mL tomato sauce
· 1/2 cup/120 mL jalapeno jelly
· 1/2 cup/120 mL dry red wine
· Beef ribs, 4 to 5 pounds/2 kg, cut into 3 to 4 sections.
· 2 teaspoons/10 mL kosher or sea salt
· 1 teaspoon/5 mL ground black pepper
|· 1 tablespoon/15 mL cider vinegar
· 2 teaspoons/10 mL chili powder
To prepare sauce, combine all sauce ingredients in a medium saucepan. Bring mixture to a boil until jalapeno jelly dissolves. Remove from heat.
Let ribs stand at room temperature for 30 minutes before grilling. Preheat grill. Coat ribs with salt and pepper and sear over direct medium heat for 10 minutes. Place ribs in deep baking dish and add sauce. Cover dish securely with aluminum foil and grill over indirect medium heat for an hour.
Remove foil and grill meat for an additional 45 to 60 minutes. When done (an internal temperature of 165 degrees F.), remove ribs from sauce and cut ribs into individual servings. Serve with sauce on the side.
